Mung Bean Pancakes



Recipe for Mung Bean Pancakes is all over the net. Here's a basic one:

2 cups mung beans soaked overnight
3 cloves of garlic
salt and pepper to taste
1 teaspoon chopped ginger root
dill or scallion or other herbs to taste
water

Crush everything in food processor until you have smooth paste/batter and drop pancakes on a hot skillet with a little oil (or bake it)

Mung beans are very nourishing and easy to digest. They rarely cause abdominal gas or bloating, unlike larger beans. A good source of dietary fiber, they contain thiamin, iron, magnesium, phosphorus, potassium and copper, and folate.

Man, I thought I'd eat anything for breakfast, but five cloves of garlic before noon?

you can add less. But this breakfast is for those people that like to live on the edge... of a garlic explosion.!
