Mung Bean Pancakes



Recipe for Mung Bean Pancakes is all over the net. Here's a basic one:

2 cups mung beans soaked overnight
3 cloves of garlic
salt and pepper to taste
1 teaspoon chopped ginger root
dill or scallion or other herbs to taste
water

Crush everything in food processor until you have smooth paste/batter and drop pancakes on a hot skillet with a little oil (or bake it)

Mung beans are very nourishing and easy to digest. They rarely cause abdominal gas or bloating, unlike larger beans. A good source of dietary fiber, they contain thiamin, iron, magnesium, phosphorus, potassium and copper, and folate.

Eating Breakfast = Healthy Teeth

A study in the Journal of the ADA concluded that eating breakfast, along with a healthy diet, is good for young teeth. DUH I say! "Overall, the findings support the notion that dental health education should encourage parents, primary caregivers and policy-makers to promote healthful eating practices, such as eating breakfast daily, for young children."

So now that dentists approve, let's dive into the Breakfast Lab and check out some of my crazy breakfasts.
